On a visit to her hometown, Rupali carefully packed traditional Pahadi spices like Gandraini and Jambu, determined to recreate the flavors she missed so much. Upon her return, she experimented with recipes, crafting dishes that transported her back home with every bite. Joshital was born from this passion—to serve fresh, homemade Pahadi delicacies to those yearning for a taste of Uttarakhand.
